Hobbit Birthday Cake (Chocolate Stout Cake with Mascarpone Frosting)

I reread The Lord of the Rings every summer. I’ve done this for the past seven years, so at this point, you can probably say that I’m a bit of a fan. And today, my friends, is a very special day: it’s Bilbo and Frodo’s birthday!

In case you’ve been living under a rock for the past decade, these two characters are the intrepid hobbits who found and then helped destroy The One Ring, which was originally created by the villain Sauron during the Second Age of Middle Earth and wait, where are you going?

Hobbits live the kind of life I want to live — they enjoy eating and drinking, followed by more eating and drinking, and then perhaps with a light dabbling of more eating and drinking. I also get the distinct impression that when there’s a celebration to be had, they do things big and dramatic, including the dessert. I mean, did you see Bilbo’s cake in Peter Jackson’s LOTR movies?

I don’t have the upper body strength to assemble a cake that size, but whatever I took away in sheer volume, I added back in taste decadence. I figured a hobbit would approve of a luxurious chocolate cake studded with dark chocolate bits — and since a good ale is always appreciated, why not add some of that coffee-like bitterness in there too to make the chocolate really sing? And just for kicks, let’s slather it all in a silky mascarpone frosting to act like a cool glass of milk. This is gonna be good.

And it is. The original recipe for the cake calls for Guinness, but I wanted to kick up the chocolate flavor, so I used a chocolate stout instead. Fun fact: It turns out chocolate stout is super gross as a beer to drink, but works really well in the cake. Feel free to use Guinness instead, though, if it’s easier to find or if you just happen to have a case in your fridge. No need to get crazy here.

Hobbit Birthday Cake (Chocolate Stout Cake with Mascarpone Frosting)
Slightly adapted from Nigella Lawson and Martha Stewart

Yield: Serves 10-12
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes (not including cooling and decorating)

For the cake:

  • 1 cup Guinness (or chocolate stout)
  • 17 tablespoons unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups superfine sugar (also called caster sugar)
  • 2/3 cup sour cream
  • 2 large eggs
  • 1 tbs vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • Optional: a handful of semi-sweet chocolate chunks

For the frosting:

  • 1 cup heavy cream
  • 1/2 cups confectioner’s sugar
  • 8 oz mascarpone cheese

Preheat the oven to 350°F. Butter and line a 9-inch springform pan.

In a wide saucepan, heat the beer and butter until the butter is melted, whisking to combine thoroughly. Take it off the heat and whisk in the cocoa powder and sugar until thoroughly combined.

In another bowl, whisk together the eggs, sour cream, and vanilla. Add this into the beer mixture and whisk to combine. Whisk in the flour and baking soda.

Pour half the batter into the prepared pan. If using, scatter a handful of the bittersweet chocolate chips. Top with the remaining cake batter.

Bake for 45 minutes to an hour, until a cake tester comes out clean. Let the cake cool completely inside the springform pan on a cooling rack before unmolding.

After unmolding the cake, prepare the frosting. Whip the heavy cream until stiff peaks form. In a separate bowl, whip the mascarpone and confectioner’s sugar until thoroughly combined. Carefully fold the whipped cream into the mascarpone mixture until uniform and smooth.

Level the cake as needed and dump the frosting on top. Decorate as you wish. I topped mine with a handful of mini chocolate chips and shaved semi-sweet chocolate.
