Brown Butter Froot Loop Treats

I don’t remember much about my college dining hall, except that there was a salad station where I often got chunks of cheddar cheese… and little to no actual salad things, come to think of it. Hmmm.

Also, there were always stacks and stacks of Rice Krispie treats, but more importantly, stacks and stacks of marshmallow treats made out of many other kinds of cereals. Golden Grahams, Cocoa Krispies, Captain Crunch, and my personal favorite, Froot Loops. Genius.

I mean, look at how cheery these are. How can you not smile when you see them?

I just took Smitten Kitchen’s incredible brown butter Rice Krispie treat and replaced the Rice Krispies with Froot Loops. The ratio of marshmallow glaze to cereal isn’t quite right with this cereal substitute, I’ll admit — there seems to be an excess of marshmallow that likes to sink to the bottom, creating an extra chewy layer. It’s not bad by any means, but I would prefer that to not happen. I’ll try again and update the recipe if my tweaks are successful.

But for now………..

Froot Loop Treats
Adapted from Smitten Kitchen

Yield: 16 pieces
Total Time: 30 minutes (not including cooling time)

  • 1 stick unsalted butter
  • 10 oz marshmallows
  • Heaping 1/4 teaspoon coarse sea salt
  • 6 cups Froot Loops cereal

Butter and line an 8″ x 8″ pan with parchment paper.

In a large pot, melt the butter over medium-low heat. Stir constantly and keep an eye on the butter as it heats — it will foam and then turn clear, and from there the browning process will be rapid. Don’t leave the stove!

You’ll know the butter has browned when it takes on a delicious nutty smell — remove it from the heat immediately (you don’t want to burn the butter) and toss in the marshmallows. Stir until all the marshmallows and butter is thoroughly combined.

Add the Froot Loops and salt to the marshmallow mixture and combine, taking care to not crush the cereal. Spread evenly into the prepared pan, packing the Froot Loops tightly together (without crushing them). Cool completely, turn out of the pan, and then cut into 16 pieces. Share and make friends.

    If it’s got brown butter, I’m in. In, around and all over it, actually. I LOVE the idea of brown butter and fruit loop treats! So yummy!

      @Karly I know, right?? Brown butter is like that delicious decadent thing that just kicks everything up 10 notches!
